Brussel Sprout Chips
I have always hated Brussels sprouts; I fed them to the kids but wouldn’t go near them myself. Actually when the kids were little they called them cabbage patch heads (geez, am I dating myself?). Anyway, my cousin made Brussels sprouts for dinner and I decided to give them a try. They were great; of course they were cooked in bacon and everyone knows that everything tastes better with bacon. Since I no longer eat pork, I needed another way of getting those little cabbage heads into my body. To the rescue: Dr. Oz.
Dr. Oz posted a recipe for Brussel Sprout Chips. The Cliff note version goes something like this: gently pull the leaves apart (takes a little patience), assemble them on a baking sheet. Spray with olive oil spray, sprinkle with sea salt and place in a pre-heated oven to 400°F and bake until crisp, about 15 minutes.
These are great as a snack or can be sprinkled on salad, rice or soups.
